1 pound beef tenderloin
2 tablespoons cornstarch
1 cup plus 4 tablespoons vegetable oil, divided
1 tablespoon chopped garlic
1 1/2 tablespoons sliced green onion
2 1/2 tablespoons granulated sugar
1/4 cup soy sauce
3 tablespoons white wine
1/4 teaspoon ground black pepper
1 cup shredded cabbage
Recipe
Slice beef 1/4 inch thick; cut into bite-size pieces. In a small bowl, combine
beef, cornstarch and 2 tablespoons oil; mix well. Let stand about 10 minutes.
Heat 1 cup oil in a wok or large saute pan over medium-high heat. Add beef and
cook just until pink color disappears, about 1 minute. Remove with a slotted
spoon, drain well and set aside.
Warm the remaining 2 tablespoons oil in a second pot over medium-high heat. Add
garlic, green onion, sugar, soy, wine and pepper; stir-fry 30 seconds. Add beef;
stir-fry 1 minute more, until beef is cooked through. Serve over shredded
cabbage.
