    Sudanese Maschi is an amalgam of Middle Eastern and African flavors. It is made with cucumbers or eggplants. This recipe from Rose Oduho serves 8.

    List of Ingredients




    2 pounds ground beef

    4 tablespoons vegetable oil, divided use

    1 teaspoon salt

    1/2 teaspoon pepper

    2 cloves garlic, mashed, or 1 teaspoon garlic powder

    4 tablespoons chopped fresh dill or 1 teaspoon dried dill)

    1 cup cooked rice

    2 large, firm tomatoes

    2 large red bell peppers

    2 large yellow bell peppers

    2 large potatoes, cooked but not soft

    2 tablespoons butter

    2 6-ounce cans tomato paste

    Water

    1/2 teaspoon salt

    1 teaspoon cinnamon

    1 teaspoon garlic powder

    In a large frying pan, sauté beef in 2 tablespoons oil. As it begins to brown, add salt, pepper, garlic and dill. Stir in cooked rice and remove from heat.

    Cut a slit in halfway across the center of the tomatoes. Squeeze at the sides to open the slit. With a spoon, scoop out the seeds from inside.

    Cut a slit lengthwise in the peppers and remove the stems, seeds and ribs.

    Cut potatoes in half, crosswise, and hollow out a space in each half, leaving about 1/2 inch of shell.

    Fill tomatoes, peppers and potatoes with beef mixture.

    Melt butter and 2 tablespoons oil in a large skillet.

    Sauté tomatoes and peppers carefully, rolling them gently until tomatoes become dark red on all sides.

    Remove tomatoes and peppers to a casserole or heavy saucepan.

    In the same pan, combine tomato paste, two cans water, salt, cinnamon and garlic powder. Simmer about 10 minutes.

    Pour sauce over stuffed tomatoes, peppers and potatoes, and simmer or bake in a 350-degree oven 15 minutes.

    Note: If there is filling left over, place it in another pan with some sauce and bake alongside the larger dish.
