> 1 medium-sized prawn, shelled and deveined with tail left on
> white breadcrumbs to coat
> vegetable oil for deep-frying
> 80g/3oz rice vermicelli (noodles)
> 1¼2 large egg
> 31¼2tbsp vegetable oil
> 15g/1¼2oz chicken breast, minced
> 15g/1¼2oz small prawns, shelled, deveined and chopped
> 1tbsp tomato ketchup
> 1tsp chilli sauce
> 6tbsp sugar
> 1tsp salt
> 2tsp lemon juice
> 2tsp fresh orange juice
> zest 2 oranges, finely sliced
For the garnish
fresh coriander leaves for sprinkling
