Mexican Chicken Chilaquiles

8 Mission® Corn Tortillas, cut into strips
4 tbsp. diced onion
1 garlic clove, minced
2 cups tomato sauce
1-3 Serrano chiles, cored, seeded & minced
1/2 chicken bouillon cube
2 cups cooked chicken breasts, shredded
Toppings: grated mozzarella cheese, minced onion
Recipe
Tortilla strips may be cooked on griddle or fried in oil until crisp.
Sauté onion and garlic in an oil skillet until translucent.
Puree onion, garlic, tomato sauce, chiles and bouillon in blender. Place the blended mixture in a skillet, bring to boil and simmer for 5 minutes. Add tortilla strips and chicken. Heat through. Serve with toppings.
