Myrtle's Dill Pickle Soup

"This is a recipe from the 1980 St. Josaphat's "To Cook With Love." In Polish it is called "Zupa Ogorkowa."
List of Ingredients
4 teaspoons butter (divided)
5 dill pickles (chopped or shredded)
1 quart water
1 carrot, chopped
2 ribs celery, chopped
1 parsley root, chopped
1 leek, chopped
1 potato, peeled and cubed
1/2 cup sour cream
2 tablespoons freshly chopped dill
Recipe
Over low heat to avoid browning, saute pickles in 1 teaspoon butter 20 minutes. Set aside.
In medium pot combine water, carrot, celery, parsley root, leek and remaining 3 teaspoons butter. Cook over medium heat 20 minutes. Add potato and cook another 15 minutes. Stir in reserved dill pickle mixture. Increase heat and bring to a boil. Reduce heat and gradually whisk in sour cream. Garnish with dill. Makes 4 to 6 servings.
