    2 t. finely chopped onion
    1 t. finely chopped green or red bell pepper
    pinch of thyme
    crumbs from 3 slices whole wheat bread
    2 slices pineapple
    salt, pepper, and lemon to taste
    1 T margarine
    1 lb. fish fillets (grouper or snapper)

    Recipe



    Saute onion, bell pepper and thyme. Mix in bread crumbs. Chop the pineapple, added it to mixture, and cook until blended. Sprinkle fish with salt, pepper and lemon juice; saute in a second skillet for 3 minutes, then turn fish fillets over, topping each with bread-crumb mixture. Cover pan; cook fish until just opaque, about 2 to 3 minutes.
