    Pineapple Walnut Shrimp

    List of Ingredients




    # 1/4 head lettuce, shredded
    # 1 cup cucumbers, sliced
    # 1 tomato, sliced

    For the sauce:
    # 1 cup mayonnaise, light or regular
    # 1/4 cup pineapple juice
    # 1/4 cup vinegar
    # 1/4 cup sugar

    For the dish:
    # 1/2 cup green peas and diced carrots, cooked
    # 1 cup pineapple chunks
    # 1 egg
    # At least 12 jumbo shrimp, deveined, tails off
    # 1/2 cup cornstarch
    # 1/4 cup vegetable oil
    # 1 cup honey-roasted walnuts

    Recipe



    Place the shredded lettuce in the center of a platter and surround it with cucumber and tomato slices.

    Combine all of the sauce ingredients until well-blended. Add the peas, carrots and pineapple chunks; set aside.

    Beat the egg well. Coat the shrimp with the egg, then lightly dust with the cornstarch.

    Heat the oil in the bottom of a wok or saute pan until hot. Add the shrimp and fry for about 3 minutes or until golden brown. Put the shrimp on top of the lettuce, pour the mayonnaise sauce on top, and garnish with the walnuts.
