Fairbury Steaks
List of Ingredients
1 pound boneless pork tenderloin
Salt and freshly ground black pepper to taste
1 cup coconut milk
2 teaspoons brown sugar
Satay Sauce:
1 clove garlic
1 small onion, chopped
1 cup shelled peanuts
3 dried hot chili peppers or 1/2 teaspoon crushed hot pepper
2 pieces preserved or candied ginger
1 tablespoon soy sauce
1/2 teaspoon salt
1 teaspoon turmeric
Juice of 1/2 a lemon
1 cup water, approximately
Recipe
Cut the pork into bite size cubes. Sprinkle with salt and pepper. Thread on skewers and marinate in coconut milk for at least one hour.
While pork is marinating, in a mortar crush the garlic, onion, peanuts, peppers and ginger. Stir in the remaining sauce ingredients or put all the ingredients in an electric blender and blend thirty seconds.
Pour the sauce into the top part of a double boiler, place over direct heat and bring to a boil, stirring. Place over boiling water and cook thirty minutes, stirring occasionally. Thin to desired consistency with more water or coconut milk.
Drain pork, reserving coconut milk for basting. Sprinkle with sugar and grill or broil for fifteen to twenty minutes, turning frequently and basting often with coconut milk. Serve with satay sauce.
Serves 4.
