Recipe Introduction
Greek, (Baked Fish)
List of Ingredients
* 3 pounds whole or sliced bream, snapper, or mackerel
* Juice of 1 lemon
* Salt and Pepper
* 1 large onion, sliced
* 2 garlic cloves, crushed
* 1/2 cup chopped celery, including leaves
* 1/2 cup thinly sliced carrot (optional)
* 1/2 cup olive oil
* 2 cups chopped, peeled tomatoes
* 1/2 cup dry white wine
* 1/2 teaspoon sugar
* Lemon slices and chopped parsley for garnishRecipe
Squeeze lemon juice over fish and season with salt and pepper to taste. Set aside while preparing sauce.
Gently fry onion, garlic, celery and carrots in oil until onion is transparent.
Add tomatoes, wine, and sugar, and season to taste.
Cover and cook gently for 20 minutes.
Spoon some of this sauce into a baking dish. Add fish and top with remaining sauce. If fish slices are used, these can be layered in a casserole dish with the sauce.
Cover and cook in 350 degree oven for one hour, removing cover after 40 minutes and cooking uncovered, basting fish with sauce frequently, during the latter stage of cooking.
Garnish with lemon slices and chopped parsley.
