NOTE: this recipe should produce a 'sharp, clean' citrus flavour, it is however very much a recipe of taste. The creator recommends maybe adding some coconut and cream to get a 'smoother' taste, or some coriander and cumin for a more spicy taste.
List of Ingredients
450g Lamb mince [beef will do]
1 medium onion
1 sweet potato
400g tomatoes [tinned or otherwise]
1 lemon
1 orange
1 stick of lemongrass
3 teaspoons garam masala [may add more to taste]
Can add lentils, chickpeas or additional vegetables, carrots are goodRecipe
1. Finely chop onions and fry lightly.
2. Boil mince in water, once cooked, drain off liquid.
3. Allow liquid to cool, take off fat and return liquid to meat.
4. Pre-boil carrots and sweet potato, do not worry if sweet potato disintergrates.
5. Add tomatoes.
6. Add garam masala.
7. Squeeze in lemon juice.
8. Squeeze in orange juice.
9. Finely grate some of lemon and orange peel and add.
10. Cut slits in lemongrass stick and add.
11. Add 250ml [1/4 pint] of water and allow to simmer until a good 'sauce' is left.
12. Remove lemongrass stick before serving.
Is good with Jasmine-scented rice.
