    List of Ingredients




    * 6 oz (150 g) -- Adzuki beans, soaked overnight & cooked
    * 1 tbsp (15 mL) -- Oil
    * ½ cup (125 mL) -- Vegetable stock or adzuki bean water
    * 1 -- Onion, chopped
    * 8 oz (200 g) -- Carrots, sliced
    * 1 tbsp (15 mL) -- Soy sauce
    * 2 tbsp (25 mL) -- Tomato puree
    * 1 tbsp (15 mL) -- Mixed herbs
    * 1 oz (25 g) -- Butter
    * 1 lb + (500 g) -- Potatoes, peeled & boiled
    * ½ tsp (2 mL) -- Jamaican Scotch bonnet pepper sauce
    * To taste... -- Salt and fresh pepper

    Preheat oven to 350 degrees F. Heat oil in large saucepan. Fry onion for about 5 minutes. Add carrot and fry 2-3 minutes more. Add cooked beans. Mix soy, tomato puree, mixed herbs & seasonings to reserved stock (you can use water or veggie stock if you forgot to reserve from cooking the beans) and pour over bean & veg mixture. Bring to a boil and simmer for 20 or 30 minutes until flavours are well blended. (You can simmer for as few as 5 minutes if your prefer to identify the flavours instead!) Transfer to a greased 3 pint oven-proof dish. Mash potatoes with the butter and spread over the bean & veg mixture. Bake for 35-40 minutes, until the potato topping is crisp and golden. You can also grate cheese over the potatoes or vary the veggies according to your tastes.
