WORLD CURRY
List of Ingredients
(4 servings):
1 cup chopped onion
2 Tbs. olive oil
1 Tbs. fresh garlic
¼ cup curry powder
1 tsp. chili paste
1½ vegetable broth
2 Tbs. brown sugar
3 cups water
3 cups carrots, diced
florets from 1 cauliflower
10 oz. chickpeas Recipe
1. Sauté onions on medium-low heat until caramelized, about 20 – 40 minutes.
2. Heat oil and sauté garlic for about a minute.
3. Add in curry spice and chili paste and sauté for another minute.
4. Place water, onions, curry spice, brown sugar and vegetable stock in a blender. Blend until smooth.
5. Put the sauce into a stockpot and bring to a low boil.
6. Add in the vegetables and reduce heat to medium-low.
7. Cook for 45 – 60 minutes, stirring occasionally.
8. Serve with rice.
