    This recipe is from the Democratic Republic of the Congo, where it is known as "Senegalese Quiche."

    List of Ingredients




    4 hard-boiled eggs, peeled
    1/4 cup milk
    1/4 cup lime juice
    1/4 tsp sugar
    1/2 tsp salt
    1/3 cup vegetable oil
    2 tbsp olive oil
    1/2 lb smoked fish (such as salmon), flaked
    2 large ripe avocados
    1 red bell pepper, cut in strips OR 1 can pimentos, cut in strips
    1/4 cup hot sauce

    Recipe



    Slice eggs and remove egg yolks; chop whites and set aside. Mash yolks in a large bowl.
    Mix in the milk and stir until it forms a smooth paste.
    Add 1 tbsp lime juice, sugar and salt; mix well.
    Pour in vegetable and olive oils; stir in rest of the lime juice.
    In a separate bowl mix egg whites and smoked fish; make sure all skin and bones are removed.
    Then add fish mixture to the yolk mixture; tossing gently and thoroughly.
    Refrigerate and then just before serving, cut avocados in half and remove seeds.
    Spoon mixture into avocado halves and top with either red pepper or pimento strips.
    Spoon hot sauce over and serve immediately.
