    Savory Pork Ribs w/ Snake Beans

    List of Ingredients




    1. 1 1/2 pounds pork spare ribs or boneless pork loin
    2. 2 tablespoons vegetable oil
    3. 1/2 cup water
    4. 1 tablespoon palm sugar
    5. 1 tablespoon fish sauce
    6. 5 ounces snake beans, cut into 2-inch lengths
    7. 2 kaffir lime leaves, finely sliced
    8. 2 red chilies, finely sliced, to garnish

    For the chili paste
    1. 3 dried red chilies, seeded and soaked
    2. 4 shallots chopped
    3. 4 garlic cloves, chopped
    4. 1 teaspoon chopped galangal
    5. 1 lemongrass stalk, chopped
    6. 6 black peppercorns
    7. 1 teaspoon shrimp paste
    8. 2 tablespoon dried shrimp, rinsed

    Recipe



    1. Put all the ingredients for the chili paste in a mortar and grind together with a pestle until it forms a thick paste.

    2. Slice and chop the spare ribs (or pork loin) into
    1 1/2-inch lengths.

    3. Heat the oil in a wok or frying pan. Add the pork and fry for about 5 minutes, until lightly browned.

    4. Stir in the chili paste and continue to cook for another 5 minutes, stirring constantly to keep the paste from sticking to the pan.

    5. Add the water, cover and simmer for 7-10 minutes, or until the spare ribs are tender. Season with palm sugar and fish sauce.

    6. Mix in the snake beans and kaffir lime leaves and fry until the beans are cooked. Serve garnished with sliced red chilies.
