Spiced Moroccan Chicken Wrappers

1 Tbs. cumin, ground
1 Tbs. coriander, ground
1 Tbs. ginger, ground
1/2 Tbs. chili powder
1/4 tsp cayenne pepper
1/2 Tbs. black pepper
1 tsp. turmeric
1 tsp. cinnamon
1 tsp. kosher salt
2 tsp. brown sugar, packed
1/4 tsp. clove, ground
1/2 Each lemon, juice of
1/2 Each lemon, zest of
1/2 Cup olive oil
6 Each chicken breast, boneless, skinless
- Sauce:
1 Cups plain yogurt
1/2 Each lemon, juice of (to taste)
1/2 tsp. dill, fresh, chopped
- Other Ingredients:
6 Each tortilla wraps, 12-inch
10 Each spinach leaves, chiffonade (shredded)
1 Each english cucumber, thin sliced
2 Each tomatoes, thin sliced
Recipe
Marinade: Mix all the spices and oil together. Add the chicken breasts and coat with the spice marinade. Marinade for about one hour. On clean hot char broiler, grill the chicken breasts until done. Remove from the grill and cool. Cut thin slices chicken on the bias.
Sauce: Combine the yogurt, lemon juice and dill. Mix thoroughly.
To make hand held wrapper sandwich: Lay out the curry wrapper. Place some spinach chiffonade, slices of cucumber and tomato slices onto center of curry tortilla. Place one 4-ounce sliced marinated and cooked chicken atop the spinach, cucumber and tomato. Place small amount of sauce over the meat, then roll like a burrito or egg roll. Cut wrapper at an angle and serve on plate with fresh fruit, mango chutney side and terra chips.
