Recipe Introduction
Stamp and Go is a traditional Jamaican fish fritter. The name most likely derived from customers who would stamp their feet in shops to get attention and go if they did not get it.
List of Ingredients
½ kg salted cod
1 heaped tablespoon butter
½ kg self-raising flour
2-3 spring onions, finely chopped
1 clove garlic, finely chopped
½ green capsicum, finely chopped
½ red capsicum, finely chopped
2 sprigs thyme, to taste
½ teaspoon mixed herbs
500 mL cold water
black pepper
olive oil, for frying
½ chilli
Recipe
1. Wash fish and boil in copious quantities of water several times to get rid of excess salt, changing the water each time. Remove bones from the fish and flake it.
2. Rub butter into flour.
3. Add fish, spring onions, garlic, capsicum, thyme and mixed herbs to the flour mixture.
4. Make a well in the centre of this mix and add water, stirring well to make a thick batter.
5. Combine this mixture thoroughly, then add black pepper. Allow to stand 5-10 minutes in the refrigerator.
6. Heat the oil in a frypan. Drop large spoonfuls of the batter into the mixture to make medium-sized pancakes, 1-2 cm thick and approximately 10 cm diameter. Fry until golden brown on both sides.
Serves 8.
