1 whole chicken, cut in half
Jerk Paste:
1 dozen pimento berries, crushed
1 sprig fresh thyme, leaves only
1 scallion or green onion stalk, crushed
1 medium piece fresh ginger, crushed
2 cloves fresh garlic, crushed
1 Scotch bonnet pepper, crushed
1 tablespoon soy sauce
1 pinch freshly ground nutmeg
Salt and black pepper to tasteRecipe
• Blend all jerk ingredients in a bowl to form a paste. Rub all over each piece of chicken. Cover and let marinate in the refrigerator overnight. Cook on the grill over pimento wood (or other desired wood chips) until chicken is done.
