    Swedish Mushroom Filled Chicken Fillets

    List of Ingredients




    Approx 10 oz mushrooms
    1 - 2 crushed garlic cloves
    scant 1/4 cup chopped parsley
    salt, pepper
    6 chicken fillets
    2 - 3 tbs butter or margarine
    2 leeks
    3 sweet peppers, different colors
    1 can whole tomatoes (in Sweden,
    the most common size of can contains
    14 oz)
    2 - 3 crushed garlic cloves (optional)
    salt, pepper

    Recipe



    Trim and chop the mushrooms. Saute in half of the fat until you hear a "popping" sound. Mix in garlic, parsley, salt and pepper. Allow to cool.

    Cut a pocket in each chicken fillet and distribute the filling in there. Seal with a toothpick. Brown the chicken on all sides in remaining fat.

    Trim and rinse the leeks. Cut the rinsed, trimmed sweet peppers in smaller pieces. Put all this in a frying pan, suitable for serving, and pour on the tomatoes. Flavor with garlic, salt and pepper. Bring to a boil. Add the browned chicken fillets, cover and simmer until the chicken is done, about 10 minutes I should think. Serve with rice or couscous and a salad. Enjoy!

    Serves 6.
