4 California Oranges
1 Cup chopped dates
1/2 cup chopped peanuts
1/3 cup Apricot brandy or curacao
1 Cup shredded coconutRecipe
1. Peel 4 oranges. Cut oranges into 1 inch slices then in 1/2-inch squares.
2. Add chopped dates, chopped peanuts, and apricot brandy or curacao.
3. Blend all together.
4. Divide 1 cup of shredded coconut into 8 dessert sauce dishes (about 2 Tbs. or 1 oz. each). Make a hole in the center of the coconut so that it forms a rim.
5. Fill centers with orange mixture. Add more brandy or orange juice if the mixture is not moist enough.
6. If you are in a rush, you may prepare this with canned mandarin oranges.
7. Serves 8.
