    Crispy Tempura Battered Chicken Stir Fry with Tropical Lychee, Longan and Pineapple, with Vegetables in a light Hawaiian Sweet & Sour Sauce

    List of Ingredients




    1 cup Kahiki Hawaiian Sweet and Sour Sauce

    1 lb. Kahiki Tempura Battered Chicken Nuggets
    1/4 cup Scallions, chopped into 1/2" pieces (green and white part of scallion)
    1/2 cup Red onions, diced into 1/2" pieces
    1 cup Green bell peppers, diced into 1" squares
    1/2 cup Seedless lychee
    ½1/2 cup Seedless longan
    1 cup Pineapple, diced into 1" chunks
    2 tsp. Minced ginger
    2 tsp. Minced garlic
    2 Tbsp. Vegetable oil
    Pineapple wedge for garnish (optional)

    Recipe



    1. Deep fry or pan-fry Kahiki Tempura Battered Chicken Nuggets. Drain nuggets on absorbent paper.

    2. Using a wok or large sauté pan, coat with vegetable oil. Heat on high until oil begins to smoke, approximately one to two minutes.

    3. Add scallions, ginger and garlic. Stir-fry for an additional minute or two.

    4. Add bell peppers and onions. Stir-fry until cooked.

    5. Add Kahiki Tempura Battered Chicken Nuggets. While continuing to stir-fry, slowly add Kahiki Hawaiian Sweet and Sour Sauce to coat ingredients. Add pineapple, lychee and longan and cook until hot. Remove to serving plate. Garnish with a pineapple wedge.

    Yield: 5 servings as part of a multi-course meal

    Serving Suggestions

    Serve in halved pineapples with steamed white rice.
    Serve with grilled slices of pineapple or mango.
    Serve with a pineapple fried rice.
    Cooking Tips

    Other seasonal fruits such as mango, Asian pears or kiwi can be substituted for the pineapple.
    Battered shrimp or pork can be substituted for the chicken nuggets.
