Recipe Introduction
Tender Pork Slices, Crispy Vegetables, fresh Mushrooms and Chinese Egg Noodles Stir Fried with Spicy Szechuan Sauce
List of Ingredients
1 1/4 cup Kahiki Szechuan Garlic Sauce
1 lb. Julienne sliced pork strips - 1/4 x 1/4 x 2 long
1 cup Julienne sliced carrots 1 cup Julienne sliced snow peas 1 cup Julienne sliced Shiitake mushrooms
1 cup Bean sprouts
1 lb. Lo mein egg noodles
3 Tbsp. Vegetable oil
1/2 cup Shaved scallions for garnish (optional)
Recipe
. Cook lo mein noodles in boiling water following package directions. Rinse in cold water. Drain well. Toss with 1 Tbsp. of vegetable oil and set aside at room temperature.
2. Using a wok or large sauté pan, coat with remaining 2 Tbsp. of vegetable oil. Heat on high until oil begins to smoke.
3. Add pork. Stir-fry for until almost cooked through.
4. Add julienne carrots, snow peas and mushrooms. Lightly stir-fry for about 15 seconds, making sure vegetables are still crisp. Remove from wok and set aside.
5. In the same wok, bring the Kahiki Szechuan Garlic Sauce to a boil.
6. Add cooked lo mein noodles, pork and vegetable mixture. Stir-fry until hot.
7. Add bean sprouts and toss. Gently stir-fry for one minute.
8. Transfer to serving platter. Garnish with shaved scallions.
Yield: 5 servings as part of a multi-course meal
Serving Suggestions
Deep-fry a few strands of the Lo Mein to use for garnish.
Large cilantro sprigs could also be used around the noodles.
Serve cold as a summer meal option.
Cooking Tips
Substitute beef, chicken, or shrimp for the pork.
Pasta, such as spaghetti or linguini could be substituted for the Lo Mein noodle
