THAI SWEET-GARLICKY CAULIFLOWER

1 tablespoon vegetable oil, corn oil, canola oil or peanut oil
1 tablespoon coarsely chopped garlic
1/2 medium cauliflower, cut into florets
1/3 cup water
1/2 small onion, sliced vertically into crescents
1/2 red bell pepper, seeded and cut into long, thin strips
1/2 yellow or green bell pepper, seeded and cut into long, thin strips
3 tablespoons tamari or shoyu soy sauce
1 tablespoon granulated sugar
Salt, optional
Recipe
Heat oil in a wok or deep skillet over medium-high heat. When the oil is hot enough to immediately set a chunk of garlic sizzling, it's ready.
Drop in all the garlic; stir-fry until barely golden, about 15 seconds. Add the cauliflower; toss for 1 minute. Add the water; cover pan. Steam for 3 minutes, then uncover and allow the water to evaporate without stirring.
When pan is almost dry and the cauliflower is tender, add the onion, bell peppers, tamari and sugar. Toss until vegetables are cooked but still firm, about 2 minutes. Taste; if desired, add salt. Serve hot.
Serves 4.
