1 � pounds boneless, skinless chicken breasts
1 medium bunch broccoli
� pound mushrooms
2 scallions (green onions)
1 tbsp. Fresh ginger (when grated)
2 tbsp. Regular or light vegetable oil
1 tsp. sesame oil
3 tbsp. Soy sauce
3 tbsp. Dry sherry (or nonalcoholic red wine or chicken broth)
Seasoning to taste
1 tsp. cornstarch dissolved in 2 tbsp. cold water
Recipe
Cut the chicken into 1-inch strips. Cut the broccoli into bite-size florets. Wash, pat dry and slice the mushrooms. Trim and chop the scallions. With a citrus grater, grate the ginger.
Heat both oils in fry pan. Add the chicken & stir-fry until it is opaque, about 2 min.
Add the broccoli to the pan and stir-fry for 1 minute. Add the mushrooms, the scallions, the ginger, the soy sauce and the sherry, and stir-fry for 2 minutes. Season to taste. Add the cornstarch mixture and stir-fry until the food is heated through and the sauce has thickened, 1 to 2 minutes.
