    Long Life Noodles Soup

    List of Ingredients




    250 g finely minced lean pork
    1 teaspoon very finely chopped dried salted cabbage
    - tang choy
    1/4 teaspoon salt
    1/4 teaspoon white pepper
    1 teaspoon cornflour
    4 cups pork or chicken stock
    4 bundles fresh fine egg noodles shaken to separate
    4 lettuce leaves washed torn into 2cm
    lengths
    2 tablespoons crisp fried eschalots to garnish
    additional white pepper to taste
    SUBSTITUTES
    Use 250g dried fine egg noodles instead --
    boil

    until cooked 3-4 minutes then add to the soup.

    RECIPE VARIATION - For a variation you could try substituting minced

    chicken for the pork, and use spinach leaves instead of the lettuce.

    Place the prok in a medium bowl and add the salted dried cabbage,
    salt,

    pepper and cornflour. Mix thoroughly with a wooden spoon. Shape 1

    tablespoon pork mixture into a small ball about 2cm in diameter and
    set

    aside. Repeat until all the mixture has been used. Bring the stock to
    the

    boil, in a large saucepan, then add the pork balls. Simmer over a low

    heat, uncovered for 10 minutes. Add the noodles and lettuce, stir
    while

    heating through about 15 seconds, then immediately transfer to four
    soup

    bowls. Garnish with the crisp fried eschalots and sprinkle over

    addittional pepper to taste.

    China - This noodle soup is a must at Chinese birthday celebrations as

    the long thin egg noodles known as mee swa, symbolise longevity. If
    you

    cannot obtain fresh egg noodles, dried egg noodles make a good
    substitute

    for this tasty soup, which is made with pork or chicken stock and
    minced

    pork balls. You don't have to wait for a birthday to serve this - try
    it

    for lunch or a light meal.
