    Choose any combination of vegetables for this dish. If you use broccoli, parboil it for one to two minutes before stir-frying to soften it. You can do this with all of the vegetables if you prefer tenderness. Olive or other vegetable oils can substitute for the soybean oil, but Sesame Inn chefs strongly prefer the taste of soybean oil. The chefs also highly recommend using a wok to cook this dish because of its higher heating factor. You can substitute a large saute pan, but cooking times will vary. If you use a wok, this dish will cook quickly, within three minutes.

    List of Ingredients




    * 1 pound chicken breast, boneless and skinless, cut into thin slices
    * 1 egg white
    * 1/2 teaspoon cornstarch, divided
    * Salt and white pepper
    * 2 tablespoons plus 1 teaspoon soybean oil, divided
    * 1/8 teaspoon minced fresh ginger
    * 1/8 teaspoon minced fresh garlic
    * Vegetables, such as sweet red and green peppers, water chestnuts, broccoli, snow peas, carrots and mushrooms
    * 1/8 teaspoon granulated sugar
    * 1 teaspoon dry white wine
    * 1/2 teaspoon dark sesame oil
    * Sliced turnips, for garnish (optional)
    * Fresh Italian (flat-leaf) parsley, for garnish (optional)

    Recipe



    Place the chicken in a mixing bowl. Add the egg white and toss, using your hands, to coat the slices. Add 1/4 teaspoon cornstarch, a pinch of salt, a pinch of white pepper and 1 teaspoon soybean oil. Mix well, cover and let the chicken marinate for no longer than 15 to 20 minutes at room temperature.

    Heat a wok, and add 2 tablespoons soybean oil; it should start to smoke instantly. Heat the ginger and garlic in the pan, then add the chicken. Stir-fry the meat just until it is no longer pink. Remove the chicken from the wok and set aside.

    Add all of the vegetables and stir-fry for about 30 seconds to 1 minute. Return the chicken to the wok and mix with the vegetables. Add salt and white pepper to taste, the sugar, wine and sesame oil: mix well.

    Transfer the mixture to a plate and garnish with turnip slices and parsley, if desired.

    Makes 1 or 2 generous servings.
