UKRAINIAN BARBECUED LAMB

Yields: 4-6 servings
List of Ingredients
1 leg of lamb, about 3.8 lb
olive oil for basting
fresh basil, chopped
fresh cilantro, chopped
fresh thyme, chopped
1 pinch cardamom
5 large garlic cloves, chopped
4 T olive oil
2 C red wine
to taste salt and pepper
Recipe
Place the boned lamb on a chopping board. Butterfly the meat.
Place the meat in a glass dish.
Mix together all the marinade ingredients and pour over the lamb. Cover and marinate over night.
When ready to cook, remove the lamb and pat dry. Lay the lamb in a baking dish, baste with olive oil and place into a 400 degree oven.
When the meat is nice and brown, turn over. Let it bake for another 15-20 minutes, then cover and cook for 15 more minutes.
It should be cooked medium.
Remove the lamb from the oven. Let it rest for 10 minutes before carving into thin slices.
Garnish with chopped basil sprigs.
