    1 2-3 lb. Chicken (cut into 12 pieces)
    1 Fresh lemon
    3 Scallions or Green Onions
    4 Stalks of cellantros
    1 Small Onion (sliced thin)
    1.5 teaspoons of Salt
    1/2 teaspoon of Jamaican Allspice
    1/2 teaspoon of Gerra or Cumin
    4 Tablespoons of Curry Powder
    2 Tablespoons of Vegetable Oil
    1/2 Cup water

    Recipe



    Wash and clean chicken with fresh lemon juice. Season chicken with green onions, garlic (3 cloves chopped), cellantros, sliced onion, salt, all spice, cumin or gerra and curry powder. Let chicken marinate for 2-3 hours before cooking. Place skillet on medium heat with vegetable oil. Add 3 cloves of garlic to oil and fry until golden brown. Add seasoned chicken and stir continuously for 1 minute until chicken is glazed with oil. Add water, cover then lower heat and simmer for 30 to 45 minutes. Taste and add salt if needed.
