Wok-it Chicken Chow Mein

175g/6oz egg noodles
1 tbsp sunflower oil
1 onion, thinly sliced
2 garlic cloves, thinly sliced
1cm/½inch piece root ginger, finely chopped (optional)
100g/4oz beansprouts
100g/4oz mangetout, halved lengthways, or peas
175g/6oz cooked chicken, shredded
1 tbsp soy sauce
1 tbsp sweet chilli SauceRecipe
1. Cook the noodles in a large pan of boiling, salted water according to
the packet instructions.
2. Meanwhile, heat the oil in a wok and stir-fry the onion over a high
heat for 2-3 minutes until beginning to brown. Add the garlic, ginger
(if using), beansprouts and mangetout or peas and stir-fry for 1 minute.
3. Drain the noodles well and add to the wok with the chicken and soy
sauce; cook for 2 minutes until piping hot. Stir in the sweet chilli
sauce and serve immediately
