1 lb. Phillips Crab Meat
2 oz. micro greens or mache
5 chives
1 seared duck breast
4 oz. boursin cheese
1 yellow tomato
2 oz. butter
1 oz. tarragon
1/4 cup white vineagar
1 oz. chopped shallotRecipe
1. In a bowl, combine crab meat with cheese and one chopped chive, mixing to bind, but not to break up the crab meat. Set aside and chill.
2.For Sauce: Dice yellow tomato, poach until very tender, drain. Combine vinegar, shallots and tarragon. Reduce until almost dry, add yellow tomato and puree in blender. Add butter slowly and emulsify. Keep at room temperature.
3. Sear duck breast to medium rare, set aside. Once rested, cut 12 thin slices.
4. Assembly: Line a #10 ice cream scoop with plastic wrap. Lay 3 slices of duck breast evenly inside, letting slices hang over the edges. Fill with 1/4 of the crab/cheese mixture, pack tight, enclose the mixture with the duck that is hanging over. Twist plastic wrap until tight and unmold from the ice cream scoop. Repeat 3 more times.
5.Once the Air and Sea is unmolded from the scoop, place on top of micro greens or mache, making sure the greens are visible. Place the yellow tomato sauce into a squeeze bottle and decorate plate. Garnish with one chive.
6. Appetizer is served cold, a slice may be cut from the item to reviel it's contents.
