Canyon Grille’s Citrus Marinated Scallop

Canyon Grille
List of Ingredients
1 cup – oil
1/2 cup – tequila
1 – lime, juiced
1 – lemon, juiced
1 – orange, juiced
1 – garlic clove, chopped
1 – shallot, chopped
1 sprig – cilantro, chopped
1/2 tablespoon – kosher salt
1/2 tablespoon – freshly ground pepper
Recipe
Step 1 – Mix all ingredients into medium mixing bowl, add scallops. Can sit for 1 hour and up to 1 day.
Step 2 – Remove scallops from marinade and grill. Helpful hint: Grilling scallops is easier if you skewer them. Metal skewer recommended but if you use wood make sure that you soak them in water.
