Clams in a Cataplana

Recipe Introduction
A "cataplana" is a large frying pan with a tightly fitting lid, usually made of copper. It is used for quite a number of portuguese recipes, particularly those of the Algarve, where I'm in vacations.
I don't know if it's possible to buy a "cataplana" out of Portugal, but a heavy casserole with a tightly fitting lid will do equally well.
List of Ingredients
2 pounds of fresh clams, with shell (or mussels), - must be previously washed and stand in salted water for one hour or two, to lose all the sand
4 tablespoons olive oil
3 onions, sliced
1 teaspoon paprika
chili pepper
3 oz ham, chopped
3 oz Spanish chorizo or garlic sausage, chopped
2 garlic cloves, crushed
1 handful fresh parsley, chopped
Recipe
Heat the olive oil over moderate heat, add the onions and the seasoning, and cook until the onions are soft; add the clams, meats, garlic and parsley. Cover and cook in moderate heat for 20 minutes. Serve immediately uncovering the cataplana, or casserole at the table.
Serves 4.
