List of Ingredients
2 T. oil
5 oz. bay scallops
5 oz. shrimp
1/2 tsp. salt
1/4 tsp white pepper
2 oz. sliced mushrooms (about 6 medium mushrooms)
2 servings cooked rice (any type you like)
1/2 T. chopped fresh cilantro (garnish)
2 oz. sliced poblano peppers
3 oz. chopped tomatoes (1 small tomato)
3 oz. fresh spinach leaves
2 oz. sliced red onions
12 oz. white wine cream sauce (recipe below)Recipe
-Heat sauté pan over medium-high heat. Add onions, peppers, mushrooms and sauté for about 30 seconds to a minute.
-Add scallops and shrimp to the pan and season with salt and white pepper. Add spinach and cook for another minute.
-Add tomatoes and white wine cream sauce (recipe below) and continue cooking for another minute.
-Place rice (use your favorite rice recipe) in the middle of a large bowl and the spoon the Yucatan Especial over the rice. Garnish with chopped cilantro and serve.
White Wine Cream Sauce
2 cups heavy cream
1/2 cup white wine
2 T. flour
2 T. oil
salt and pepper to taste
-Make a roux by heating the oil in a small sauce pan and whisking in the flour. Cook the flour, whisking constantly, until it just turns a light blond color.
-Whisk in the white wine and then the cream. Whisk until smooth, thickened and bubbly. Season to taste with salt and pepper.
-Keep warm until ready to use.
