Crab in Papaya Cups

2 ripe papayas
2 c. flaked, cooked crab meat
2 T. finely chopped chives or green-onion tops
1/2 t. curry powder
2 T. toasted sunflower seeds
Parsley or mint sprigs for garnish, optionalRecipe
Cut the papayas in half length-wise; carefully
remove all the seeds. Using a melon baller,
remove the papaya pulp, being careful not to tear
the peel.
Combine the papaya balls and all other
ingredients except the parsley or mint sprigs in
a mixing bowl; mix well. Divide the mixture
equally into the papaya "bowls" made from the
peels. Garnish each papaya cup with a sprig of
fresh parsley or mint. Makes 4 servings.
