    Crabcakes with Smoked red bell pepper Sauce

    Recipe Introduction

    Yields: 10 crabcakes

    List of Ingredients

    7 eggs
    1 red bell pepper, diced
    7 green onions, diced
    1 1/2 lb jumbo lump crabmeat
    1 C bread crumbs
    salt with white pepper
    1/2 t cayenne pepper

    Recipe

    Mix bell pepper, onions, eggs and seasonings together.
    Add crabmeat gently to mixture.
    Slowly add bread crumbs and mix by hand so that the crabmeat is not broken.
    Make into patties.
    Sauté in butter until nicely browned, then oven roast at 350 degrees until done, or toothpick comes out clean.

    Ingredients: Smoked bell Pepper Sauce :
    3 red bell peppers
    1 pt heavy cream
    Method: Smoked bell Pepper Sauce:
    Smoke or roast bell peppers without stems or seeds.
    Purée peppers and cream in blender.
    Simmer mixture slowly on top of stove, adding salt and pepper to taste. If desired, strain through a china cap.
