Crackling Fish Sticks

3 tbsp. low-fat mayonnaise
1 tbsp. lemon juice
1/4 tsp. liquid hot pepper sauce
4 cups cornflakes
1 tbsp. grated lemon peel
1 pound orange roughy or other whitefish fillets
1/2 cup Lemon Tartar Sauce
Lemon Tartar Sauce:
Makes 1/2 cup
Ingredients:
1/3 cup low-fat mayonnaise
3 tbsp. pickle relish
1 tsp. drained small capers
1 1/2 tsp. grated lemon peel
1 1/2 tsp. lemon juice Recipe
1. Preheat the oven to 500°F. In a small, shallow dish, stir together the mayonnaise, lemon juice and hot pepper sauce. Crush the cornflakes to make coarse crumbs using a rolling pin or food processor. Add the lemon peel and mix. Transfer the crumbs to a plate. Cut the fish crosswise into 3/4-inch strips.
2. Brush the fish lightly with the mayonnaise mixture, then dip it into the crumbs to coat completely. Place the fish sticks on a baking sheet, leaving at least 1 inch between each stick. Sprinkle the tops with any remaining crumbs.
3. Bake the fish sticks, without turning, until they are opaque in the center and the crumbs are golden brown, 14 to 16 minutes. Serve with the tartar sauce.
Instructions:
In a small bowl, whisk together all of the ingredients. Cover and refrigerate for at least 30 minutes or up to 3 days before using.
Serves 4.
