    Lobster Benjamin with Carmelized Corn

    Cornbread:
    1 cup yellow corn meal
    1 cup all purpose flour
    1/4 cup corn oil
    1 cup corn kernels
    2 t double action baking powder
    1/4 cup grated parmesan cheese
    1 t salt
    1 t sugar
    2 large eggs
    1 cup milk

    Recipe



    In a large skillet, combine corn oil and butter. When hot, add
    kernels, followed by yellow corn meal, salt and sugar. Stir for
    about 10 minutes.
    Add flour and double action baking powder. Stir for 2 minutes.
    Add milk and eggs. Stir until mixture is as thick as paste.
    Boil lobster for about 15-20 minutes (add 10 minutes
    per additional lobster). Cut in half. Present lobster halves
    flat and place corn bread on top. Put under broiler for 3
    minutes or in a 500 degree oven for 4-5 minutes, until
    golden brown.
