Marinated Tilapia with Vegetable Medley

List of Ingredients
8 Tilapia Filets
For Fish Marinade:
3 Tablespoons Minced Ginger
1/2 Cup Chopped Green Onion (Use Bottom And Save Green Top For Garnish)
4 Garlic Gloves, Minced
3 Tablespoons Brown Sugar
2 Ounces Olive Oil
4 Ounces Soy Sauce
Recipe
Combine all ingredients in 2 plastic bags and add tilapia. Close the bags tightly and shake gently to coat the fish. Let the fish marinade for about ten minutes. Remove fish from bags, reserving marinade, and place fish on a baking pan with non-stick cooking spray. Bake fish at 450 degrees for 12 to 15 minutes.
Vegetable Medley
Ingredients:
2 Tablespoons Olive Oil
2 Red Peppers Thinly Sliced
2 Bunches Asparagus, Woody Bottom Removed
1 Large Carrot, Shaved
Kosher Salt, Black Pepper, Lemon Juice To Taste
Heat the olive oil in a saut� pan. Add the red pepper, asparagus and carrot strands. Season with salt and pepper. Add lemon juice and the reserved marinade. Bring to a boil and remove from heat.
Place a bed of vegetables on a plate and top with fish. Spoon sauce over the dish and garnish with sliced green onion tops.
