Maui Mango Pasta With Shrimp

Sweet-and-Sour Mango Sauce (see recipe)
1 pound mango or other pasta of choice, any shape (flavored pastas
are available at specialty-food stores)
24 raw shrimp, peeled and deveined
salt, pepper
1 teaspoon sesame oil
1 tablespoon vegetable oil
2 teaspoons minced green onion
2 teaspoons chopped ginger root
1 tablespoon chopped green onion, green part onlyRecipe
Make Sweet-and-Sour Mango Sauce.
Cook pasta in boiling salted water until al dente. Drain and set
aside. Keep both sauce and pasta warm.
Season shrimp with salt and pepper to taste. In a pan large enough to
contain 1 pound cooked pasta, saute shrimp in oils along with minced
green onion and ginger root, until shrimp turns pink. Do not
overcook. Remove shrimp with a slotted spoon, leaving oil and ginger
blend in pan. Keep shrimp warm. Add cooked pasta to pan and
Sweet-and-Sour Mango Sauce. Heat through.
Mound pasta mixture into center of 4 serving plates. Top each with
1/4 of sauteed shrimp and sprinkle with chopped green onion.

Sweet-and-Sour Mango Sauce
Makes about 1 cup
1 1/2 cups pineapple juice
1 1/2 cups mango juice
1 teaspoon minced ginger root
1/2 cup rice vinegar
3 tablespoons brown sugar
1 teaspoon sesame oil
2 tablespoons soy sauce
In a saucepan, combine pineapple and mango juices, ginger, vinegar,
brown sugar, sesame oil and soy sauce. Bring to a boil and simmer
about 15 minutes until mixture is reduced to about 1 cup.
Serves 4.
