List of Ingredients
1 tablespoon butter
1/4 white onion, chopped
1 teaspoon chopped garlic
1/8 teaspoon salt
1/8 teaspoon ground black pepper
1/8 teaspoon dried red pepper flakes
1 teaspoon chopped parsley
3 ounces (about 1/3 cup) crumbled salsiccia (spicy Italian sausage)
1/2 cup red wine
1 1/3 cups tomato sauce
24 black Atlantic mussels (see note)Recipe
In a large saucepan, combine butter, onion, garlic, salt, black
pepper, red pepper, parsley and sausage; cook and stir over
medium-high heat until sausage is browned. Add wine, stirring with a
wooden spoon to loosen any browned bits from the pan. Add tomato
sauce, then mussels. Cook, stirring occasionally, until mussels open
and sauce is somewhat reduced. Arrange mussels in a circle on plates;
pour sauce over mussels and in the center of the circle. Serve
immediately.
Note: Examine mussels before adding. If a shell is slightly open, rap
the mussel firmly on the counter. If the shell does not close, the
mussel should be discarded. Any mussels that do not open after
cooking also should be discarded.
