2 cups panko breadcrumbs
1/2 cup sliced almonds
1/4 cup chopped parsley
1/2 cup shredded Parmesan cheese
1 teaspoon Old Bay Seasoning
3 eggs
2 cups buttermilk
4 fresh Petrale sole fillets, about 1 pound
1 cup flour

Combine breadcrumbs, almonds, parsley, cheese and seasoning in bowl. In
separate bowl, beat eggs and add buttermilk. Lightly flour sole filets,
dip into buttermilk mixture, and then into breadcrumb mixture until well
coated. Pan fry fillets in butter until golden brown.
Makes 4 servings.
