List of Ingredients
1 teaspoon oil, or as needed
2-3 medium mushrooms, thinly sliced
1 small carrot, shredded
1/4 small onion, thinly sliced
10-12 large shrimp, peeled and butterflied (see Note) 1 tablespoon soy sauce
Pinch of salt
Pinch of pepper
1 teaspoon grated fresh ginger
1 teaspoon grated fresh garlic Pinch of sugar
2 green onions, cut into 1-2 inch pieces
2 eggs, beaten (see Note)
1/2 cup cooked rice
1 teaspoon sesame oilRecipe
Heat oil in wok or skillet over medium-high heat. Add mushrooms,
carrot, and onion; stir fry briefly. Add shrimp. Season with soy
sauce, salt, pepper, ginger, garlic and sugar (in that order). Add
green onions. Pour beaten egg over the vegetables. Cook, omelet
style, turning over once. Scoop rice into serving bowl and pour
omelet over top. Drizzle with sesame oil.
Note: If desired, substitute chicken or beef for the shrimp, or use
all three for a combination rice bowl. If desired, another egg can be
added. In testing the recipe, we used 3 eggs.
