Quattro's baked rainbow trout with black truffle
List of Ingredients
4 Trout fillets (remove pin bones)
2 cups Fine breadcrumbs
1 bunch Italian parsley, chopped
1 lemon Zest and juice
¼ cup Olive oil
2 Tbsp Butter (unsalted)
1 tsp Black truffle pate
2 Tbsp Vegetable oil
Salt and pepper to tasteRecipe
For the breadcrumbs:
Mix breadcrumbs with lemon zest, lemon juice, parsley, melted butter, olive oil and salt and pepper to taste.
For the trout:
Preheat oven to 350F. Season trout with salt and pepper. Heat vegetable oil in an ovenproof pan at medium to high heat.
Place trout in pan, flesh side down, pan fry for approximately two minutes. Turn trout over and pat breadcrumbs onto flesh side of fish. Remove from stove and place in oven for five minutes. Remove trout from oven. Spread the truffle pate on top of the breadcrumbs.
Serve with your favourite risotto and grilled vegetables.
