List of Ingredients
•4 filets of Snapper
•6 tbls. of butter
•2 tsp. shallots
•2 tsp. chopped garlic
•2 tsp. chopped onion
•1 cup white wine
•6 tbls. dry vermouth
•4 oz. sliced mushrooms
•2 tbls. red pimentos
•4 artichoke hearts, quartered on top
•salt & pepper to tasteRecipe
Melt 4 tbls. butter in a large skillet. Add the snapper filets and saute til done to your likeness. In a separate saucepan combine the rest of the butter, shallots, garlic, onion, white wine, vermouth, mushrooms, pimentos and artichoke hearts and cook over medium heat until soft and translucent, about 5 minuets. Reduce heat and cook 5 minutes. Arrange sauteed snapper filets on plates, spoon sauce on top and serve.
