Salmon with Broccoli

List of Ingredients
Salmon Filet (Low Carb)
4 Pieces of approx. 8 oz. Salmon Filet
4 Tsp. Vegetable Oil
1 Tsp. Salt
4 Tbs. Fried Capers
4 Tbs. Diced Tomatoes
6 Cups Broccoli Florets
Lemon Wedges
2 Cups Lemon Sauce (recipe below)Recipe
1. Oil both side of thawed salmon in a fonda tray
2. Season both sides with salt
3. Place salmon filet on broiler over medium heat and grill for 3-4 minutes turning filet 1/4 turn Half way through the cook time.
4. Using a wide spatula flip salmon and grill for additional 3-4 minutes, turn filet again 1/4 turn.
5. Place salmon on plate and sprinkle capers and diced tomatoes over salmon.
6. Heat broccoli and to plate. Garnish broccoli with lemon wedge.
7. Add lemon sauce to plate in a separate bowl.
Lemon Sauce:
3/4 Cup Shallots, finely chopped
1/2 Cup Dry white wine
1/2 Cup White wine vinegar
4 Tbs. Heavy Cream
1 Cube Butter
1/2 Tsp Salt & Pepper (to taste)
1 Tbs Lemon Juice
Directions:
1. Combine shallots, white wine and vinegar in a heavy bottomed sauce pan. Cook on low heat until you have 10% left.
2. Add Heavy Cream
3. Make sure that the cream reduction hasn't browned
4. Slowly add cubed butter in small amounts while whisking.
5. Make sure the sauce is not broken
6. Season as you wish with salt and pepper.
7. Add the lemon juice and incorporate.
