Snapper Mediterranean

List of Ingredients
4 whole snappers (approx. 1 LB each)...clean, scale, cut off fins.
2 oz butter.
2 oz extra virgin olive oil.
2 oz sliced black olives.
2 large beefsteak tomatoes...cut into small dice.
juice of one lemon.
8 cloves of garlic...oven roasted, sliced thin.
1 oz herbs de Provence.
2 oz capers.
2 tbsp finely chopped garlic.
2 fresh lemons cut into wedges...
Recipe
Deeply score both sides of each snapper.
Smear chopped garlic evenly over snapper.
Smear softened butter over snapper.
Sprinkle herbs de Provence over.
Bake in hot oven at 400 degrees for approximately 20 minutes.
Heat remaining ingredients in sautŽ pan.
Pour over snapper.
Sprinkle extra virgin olive oil over.
Serve with lemon wedges and Jasmin rice.
