    List of Ingredients




    1 tbs dried oregano
    1/2 tsp salt
    3/4 cup olive oil
    1/3 cup lemon juice
    1 whole fish -- red snapper or St. Peter's fish

    Recipe



    Slice fish across from head to tail on each side to allow fish to cook through.

    Sprinkle oregano and salt on each side, use more for larger fish.

    Pour 1/2 cup olive oil-- over fish-- coat on both sides.

    Place on grill (preferably in a fish holder) cook 12 minutes on each side (don't turn).

    When cooked, remove from grill.

    Mix remaining olive oil and lemon juice and pour mixture over hot fish-- serve.
