    List of Ingredients




    • 2 pounds caribou roast, cut in 1-inch cubes
    • 2 cups water
    • 1 teaspoon lemon juice
    • 1/2 teaspoon basil leaves
    • 2 cups beef broth
    • 1 bay leaves
    • 1/2 cup onion, chopped
    • 1 can (16 ounces) stewed tomatoes
    • 2 cups celery, sliced
    • 1 cup carrots, sliced
    • 1 cup cauliflower
    • 1/2 cup fresh mushrooms, sliced
    • 4 potatoes, sliced
    • 1 cup spinach, sliced
    • Salt and black pepper to taste

    Recipe



    Brown caribou pieces in Dutch oven. Add lemon, water, basil, broth, onion, and bay leaf. Bring to a boil. Cover and simmer for 90 minutes. Add tomatoes, celery, carrots, cauliflower and mushrooms. Cover and simmer for about 40 minutes. Add potatoes and simmer until tender. Add spinach and simmer five minutes.
