4 pounds moose or deer
1 pound pork fat
3 teaspoons Salt
3 teaspoons Black pepper
3 finely chopped clove garlic
2 teaspoons Mustard seed
4 teaspoons Only In New Orleans® Herb/Spice Recipe
Cut meat and fat in 1 inch cubes and place in large glass container. Mix spices and spread over meat. Mix thoroughly. Cover and let stand overnight in refrigerator. After approximately 24 hours, grind into casings.
