    - 1 Rabbit broken down

    Racks cleaned & loins
    Legs marinated with carrots, ginger, on low, garlic, bay & dill, banyols vinegar, Worcestershire sauce.


    - 1 Bunch Baby Carrots
    - 1/2 cup pearl onions
    - Fingerling potatoes, sliced
    - Garlic cloves
    - Baby herb salad
    - 2 cups chicken stock
    - Bouquet of herbs

    Recipe



    Roast the vegetables and finish with rabbit toes.

    Braise legs with mirepoix and chicken stock

    Raise saddle and rack

    Slice the saddle, place in ring on plate and fill with vegetables.

    Braised leg meat across from vegetables.
