Wild Mushroom & Brandy Ostrich

List of Ingredients
4oz. Soy Sauce
3oz. Pinapple Juice
2tbs. Brown Sugar
1tbs. Chopped Garlic
2oz. Japanese White Wine
1oz. Wild Mushrooms(your choice)
2oz. Brandy
8oz. Ostrich Tenderloin
1oz. Olive Oil w/ Garlic and Rosemary
Recipe
Pan-sear Ostrich in olive oil for 2 minutes each side; add Brandy.
Place the first six items in second pan on medium heat and reduce by 1/2.
Add to Ostrich and cook to Medium Rare; 8-12 minutes.
Serve Ostrich sliced into thin strips with a garnish of seasonal fresh vegetables.
